We at Gillies are very conscious of our environment here in the Highlands and so in addition to the food miles that we save by using local fruit and veg, we recycle whenever and whatever we can.

Our cardboard, plastic, glass, tins and paper are recycled and our fruit and vegetable waste is composted. We send very very little to landfill.

In the kitchen we have a heat exchanger which takes the warm air from the kitchen and heats the water. Our building itself is made of 95% wood, just one small part has block walls.

What we really want next is a windmill.
