Highland summer days are long and consequently the sugars in the soft fruit have longer to mature, giving a more developed flavour and sweetness, making Scottish soft fruit arguably the best in the world.
Raspberry For many years Scotland has been noted for the quality of the raspberries grown. We always try to use the variety Glen Ample in our jam. Raspberries, sugar and a touch of fruit pectin, just that.
Strawberry Strawberries, sugar, a little squeezed lemon juice to balance the sweetness and a hint of fruit pectin, no more.
Blackcurrant Almost exclusively the variety Ben Conon which in a good year are nearly the size of grapes! Some sugar and a touch of pectin.
